The need to use it as a PWA on mobile may be too annoying for you, but I mainly use mobile for viewing and not editing notes so its fine for my use case. I have some minor grievances with it, but nothing in the FOSS world compares to it as a self-hosted knowledge base tool that I have found so far (AnyType maybe one day). Overall, it is more of a knowledge base application rather than notes, and you can build custom workflows in it if you want. The thing that won me over was its backlinks/zettelkasten structure, I had tried using the Joplin plugin for backlinks but it was super clunky, whereas in Trilium it is a first class citizen and very well integrated. It does not have a mobile app, it has its own sync server (but was simple and easy to setup). I ended moving to Trilium and have been liking it so far. I also did not like how limited the organisation structuring was, no nested folders, poor linkability and the fuzzy searching of notes was mediocre. Wait until the container is created and spun up. Click the Login / Start button (see screenshot bullet 1) and login with your Docker account (you need to create one if you don't already have one). I do like Joplin and used it for some time, but I ended up moving away from it. It's not free, so if you're looking for a free alternative, you could try Notepad++ or Standard Notes. QOwnNotes is a desktop application optimized for single users (but you still can sync your markdown files as you like) and not very opinionated on how your markdown files look. I saw some Joplin suggestions from some other comments. HedgeDoc is a (self hosted) online solution with collaborative features.
